Sindhi Pakora With Sweet Tamarind Chutney | Majha Kitchen | Sanjeev Kapoor Khazana

SINDHI PAKORA

Ingredients

3 medium potatoes, peeled
1 large onion, chopped
¼ medium bunch fresh fenugreek leaves, finely chopped
Oil for deep-frying
1 teaspoon cumin powder
½ teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
Salt to taste
¼ cup gram flour
A pinch baking soda
Chaat masala for sprinkling

Method

1. Heat sufficient oil in a kadai.
2. Cut potatoes into small pieces and transfer in a bowl.
3. Add onion, fenugreek leaves, cumin powder, turmeric powder, chilli powder, coriander powder and salt and mix well.
4. Add gram flour and mix. Add 3-4 tablespoons water and mix. Add baking soda and mix well.
5. Drop in small portions of mixture in hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
6. Sprinkle some chaat masala on top and serve hot with sweet tamarind chutney.

SWEET TAMARIND CHUTNEY

Ingredients

¾ cup grated jaggery
½ cup tamarind
¼ cup raisins
½ teaspoon turmeric powder
1 teaspoon red chilli powder
1 tablespoon coriander powder
1 teaspoon dried ginger powder
Salt to taste

Method

1. Take tamarind in a pressure cooker. Add jaggery, raisins, turmeric powder, chilli powder, coriander powder, dried ginger powder, salt and 4-5 cups water and mix.
2. Place the cooker on heat and cook till 4-5 whistles.
3. Blend the cooked mixture using a hand blender to make a smooth mixture. Strain in a non-stick pan.
4. Place the pan on heat and cook for 8-10 minutes or till it thickens.
5. Serve with Sindhi pakoras.
