BAKED CHEESE – (Serves – 4)
½ cup feta cheese
1 cup cream cheese
½ cup grated parmesan cheese
1 tablespoon chopped garlic
Crushed black peppercorns to taste
1 tablespoon finely chopped fresh chives
1 teaspoon balsamic vinegar
1 tablespoon olive oil
3 cherry tomatoes
1. Preheat oven to 180° C.
2. Grind together feta cheese, cream cheese, parmesan cheese, garlic, crushed peppercorns, chives, balsamic vinegar and olive oil in an electric food processor to make a smooth mixture. Transfer into an oven proof plate and place cherry tomatoes on top.
3. Put the plate into preheated oven and bake for 5-10 minutes.
4. Diagonally slice the baguette and transfer on a baking tray. Put the tray in preheated oven and toast for 5 minutes.
5. Garnish with a fresh parsley sprig and serve with toasted bread.
