ANDHRA CHILLI PANEER
200 grams cottage cheese
Salt to taste
1 teaspoon lemon juice
1 tablespoon red chilli paste (ginger, curry leaves, garlic, rice, salt and dried red chillies)
1 tablespoon yogurt
1 tablespoon oil
Refined flour for coating
Fried curry leaves
1. Cut cottage cheese into big cubes and transfer this into a bowl. Add salt, lemon juice and mix well. Add red chilli paste and mix well. Add yogurt and mix well. Set aside for ½ an hour.
2. Heat oil in a non-stick pan.
3. Spread refined flour on a plate, roll the marinated cottage cheese in it, shake off excess flour and add to the pan. Cook for one minute, turn over the cottage cheese pieces and cook for another minute.
4. Serve hot garnished fried curry leaves
